For Christmas in 2005, my parents took us on a cruise to Mexico! It is one of my most favorite memories! Leaving snowy cold Idaho for a week was just what our family needed!
A few relatives from my mom’s side were with us and it was a party for a week! I seriously gained 10 lbs. and it was so worth it! One of the things I LOVED when we would "port" was the guacamole. It was like nothing I'd ever tasted!
Through years of college, starting our family, and now my husband in graduate school....I had to come to terms with the fact that I wasn't going back to Cabo San Lucas or Mazatlan for a VERY long time!
So here's our version of The Easiest Homemade Fresh Chunky Guacamole! from Mexico!
Step-by-Step
- Cut avocados in half-length wise and remove seeds.
- Take a spoon and scoop the inside of the avocado into a bowl.
- Mash the avocado with a fork and leave some chunks.
- Add onion, cilantro, and tomato; gently stir all together.
- Add spices according to your preference (onion, garlic, cumin, salt, pepper, etc.) and gently incorporate
- Put in a serving dish and enjoy!!
- This is great with chips, on tacos, quesadillas, and all Mexican dishes!
- Place unripe avocados in a brown paper bag with an apple or banana for two to three days until they are ripe.
- Hass Avocados are the best for guacamole.
- Corn, feta cheese, shaved parmesan cheese, lime juice, green onions, and jalapeños are fun guacamole add-ins. Play around to find your favorite combo!
- Store leftover guacamole in an airtight container. Any part of guacamole that air touches will turn brown. This container is a must when storing guacamole!
Chunky Guacamole
Ingredients
- 2 whole Avocados ripe
- 1 whole La Roma Tomato finely chopped
- ¼ cup Green Onion chopped
- ⅙ cup Cilantro chopped
- 1 clove Garlic minced
- ¼ teaspoon Cumin ground
- Salt and Pepper to taste
Instructions
