My friend Tess introduced me to these little gems and dang her.... they are amazing and delicious!!! This will be the easiest recipe you ever make, and it's only three ingredients!
Easy Peanut Butter Ritz
Ritz crackers (you'll need two per cookie)
White chocolate (I use white chocolate wafers)

Instructions: Spread peanut butter on one ritz then place another ritz on top of the peanut butter, creating a sandwich. One at a time, place a cracker sandwich in the bowl of white chocolate. Usa a fork and very carefully lift the covered cracker sandwich out of the chocolate. With a butter knife push the sandwich to the edge of the fork then run that same knife on the bottom of the fork. This will remove the excess white chocolate. Place on a silicone mat or parchment paper to dry. I always use a sheet pan so I can move them out of my work space to fully set up. Once dry, store in an airtight container!
