Almond Joy Cake Mix Cookies

Easy cake mix cookie recipe
Almond Joy candy bars have always been a favorite of mine....let's be real ALL candy bars are a favorite of mine! I just love the creamy coconut and toasted almond that Almond Joys have joyfully wrapped up in chocolate. I knew I had to make a cookie form....so without further ado we present Almond Joy Cake Mix Cookies.
Almond Joy Cake Mix Cookies
1 box chocolate cake mix
2 eggs
1/2 cup vegetable oilInstructions: Mix until incorporated. Place on parchment paper or a silicone mat on a jelly roll cookie sheet. Using a small cookie scoop, place 12 dough balls on your sheet about 1.5-2" apart. Bake at 350 degrees for 8 minutes. I like to tap my cookie with my spatula a little bit right when I pull them out of the oven. Transfer to a cooling rack and continue baking the remaining dough. I was able to get 3.5 dozen.

Almond Joy Filling
1 can sweetened condensed milk
2 cups shredded coconut, sweetened
Toasted Almonds, one per cookie

Add 1 1/2 cups coconut to a medium size mixing bowl. Add one full can of sweetened condensed milk; add remaining coconut until it's your desired consistency. (Mine was a nice thick consistency.) I didn't have any excess milk in the bowl.
Once the cookies have cooled put a dollop of the coconut mixture on the cookie and at least 1 toasted almond. Let them sit while you finish all the cookies. Then frost with the chocolate frosting.Chocolate Frosting
6 Tablespoon butter, softened
1/2 c. cocoa powder
2 2/3 c. pwd. sugar
1/3 c. milk or cream
1/2 tsp vanilla extract

Instructions: Cream all ingredients together until smooth. Frost over the coconut and almond.

Enjoy!

Using a small cookie scoop (approx. 1 inch diameter) place 12 dough balls on either a parchment or silicone lined jelly roll pan. ​
Bake at 350 degrees for 8 minutes. I like to lightly tap my cookies after I pull them out of the oven. If you want a smaller fluffier cookie don't do this... but it holds more frosting if you do! ​
