I'm about to change your life for the better! These are the best cookies that will grace your lips! Also they have oats so they are healthish right? (wink wink)
I've made mini and large, both are perfect! If you make mini cookies you'll get about 90 cookies and with a large cookie scoop (1/4 cup scoop) you'll get 2 dozen.
Chewy Cadbury Mini Egg Cookies
2 cubes REAL Butter, softened (1 cup)
1 cup brown sugar
1 cup white sugar
2 eggs
2 cups all purpose flour
2 1/2 cup old fashioned oats (blend into a fine powder after you measure 2 1/2 cups)
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 10 oz. bag Cadbury mini eggs (if you're feeling wild and crazy throw and extra 1/2 bag in!)
1/2 cup semi-sweet chocolate chips, Optional (pulse in a food processor)Cream butter, white sugar, and brown sugar together. Beat in eggs until fluffy. Add in baking soda, baking powder, and salt. Add in blended oats, crushed mini eggs, chocolate chips, and flour and mix until incorporated. Don't over mix! Bake at 375 degrees until done (mini cookies 8 minutes and large cookies 14 minutes). Cool on cooling rack and enjoy!!!

Step-by-step
Cream butter, white sugar, and brown sugar together. Beat in eggs until fluffy.
Add in baking soda, baking powder, and salt.
Measure 2 1/2 cups old fashioned oats into a blender then pulverize to a fine powder.
Add flour and pats to the bowl and gently mix.
Place Cadbury Mini's in a large ziploc bag and break with a rolling pin. Add the chocolate eggs and chopped chocolate chips to the batter and mix just until incorporated. If you are going to add in the chocolate chips now is the time!
Bake at 375 degrees until done. Mini's will take about 8 minutes and the large will take about 14 minutes. Bake time will vary so cook until desired color.
