Chewy Cadbury Mini Egg Cookies
Are you team Mini Cadbury Eggs? My friend Ashley introduced me to them when I was in SEVENTH GRADE! I'm obviously team mini eggs since I remember where I was and what I was doing when I first tasted them. I think and treat you can sneak these into is a win! I'm about to change your life for the better with these cookies! These Chewy Cadbury Mini Egg Cookies are the best treat that will grace your lips! Also they have oats so they are healthy-ish right? (wink wink)
Step-by-step
- Grab your supplies! You'll need butter, white sugar, brown sugar, eggs, salt, baking soda, baking powder, oats, flour, chocolate chips, and Cadbury mini eggs.
- Cream butter, white sugar, and brown sugar together.
- Beat in eggs until fluffy.
- Add in baking soda, baking powder, and salt.
- Next add blended oats, crushed mini eggs, chocolate chips, grated chocolate, and flour and mix until incorporated. Don't over mix!
- Bake at 375 degrees until done (mini cookies 8 minutes and large cookies 14 minutes). Cool on cooling rack and enjoy!!!
- Is there a thing as too much chocolate? Throw in a little extra to really take these cookies to a new level!
- I've made mini and large, both are perfect! If you make mini cookies you'll get about 90 cookies and with a large cookie scoop (1/4 cup scoop) you'll get about 24 cookies.

Chewy Cadbury Mini Egg Cookies
Ingredients
- 1 cup Butter softened
- 1 cup Brown Sugar
- 1 cup White Sugar
- 2 eggs
- 2 cups All Purpose Flour
- 2 ½ cups Old Fashioned Oats Pulverized in Blender after you've measured the 2 ½ cups
- ½ teaspoon Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 10 ounce bag Cadbury Mini Eggs Broken into smaller pieces
- 1 ½ cup Chocolate Chips Milk chocolate or semi-sweet are great.
- ½ cups Chocolate Chips Pulse in a food processor so chop up fine.
Instructions
- Cream butter, white sugar, and brown sugar together.
- Beat in eggs until fluffy.
- Add in baking soda, baking powder, and salt.
- Add in pulverized oats, crushed mini eggs, chocolate chips, grated chocolate chips, and flour. Mix until incorporated, but don't over mix!
- Bake at 375 degrees until done. Mini cookies around 8 minutes and large cookies 14 minutes.
- Cool on cooling rack and enjoy!!!
