Strawberry Spinach Salad
Ingredients
7-10 cups fresh baby spinach, washed
2 lbs. fresh strawberries (I usually throw a bunch out if the strawberries are nasty, use what you want here)
1 lb. candied bacon (below)
1 cup crumbled feta cheese
Dressing
1/2 cup vegetable oil
1/4 cup balsamic vinegar
1/3 cup sugar
1 tablespoon poppy seeds
In a large bowl toss the spinach with the strawberries and candied bacon. In pint size jar, whisk together all dressing ingredients. Add dressing and toss to combine. Sprinkle the feta over the top of salad. Serve immediately.
Candied Bacon
1 lb. bacon, cooked
1/4 cup chopped pecans
1/4 cup brown sugar
Sprinkle pecan and brown sugar mixture on the bacon and broil. Watch very closely- cook until mixture is candied (around 2 minutes when rack is on the bottom rack,)
