Mom's One-Pot Broccoli Cheese Soup

Continuing on our journey through our moms cookbook, we bring you this fabulous, one-pot broccoli cheese soup. I am a bit embarrassed to admit that this is the first time I have made this soup. I've made countless other broccoli cheese soup recipes, but this one has been my favorite! Not even just saying that. It is creamy and so flavorful.

Broccoli Cheese Soup

 
Continuing on our journey through our moms cookbook, we bring you this fabulous Broccoli Cheese Soup. I am a bit embarrassed to admit that this is the first time I have made this soup. I've made countless other broccoli cheese soup recipes, but this one has been my favorite! Not even just saying that. It is creamy and so flavorful.
 

Broccoli Cheese Soup

2 fresh heads of broccoli, washed and cut
2 14 oz. cans of chicken or vegetable broth
2 packages of Lipton Cream of Chicken Cup of Soup (Highly recommended buuuut if you don't have this on hand, a substitute can be found below)
2 C. Half and Half
1 lb. Velveeta Cheese, cut into cubes

Instructions: Put chicken broth and Lipton soup packets in large pot and mix well. Add your remaining ingredients, and cook on medium high heat until soup is boiling. Stir occasionally to assist the cheese in melting. Once boiling has started, turn heat down and allow soup to simmer for 30 minutes or until broccoli is tender, stirring occasionally.

Recipe makes 9 cups of soup. I served 1 cup to each kid and 1 1/2 cups to the adults.

*****If your store does not carry Lipton Cream of Chicken Cup of Soup, you can make a roux to thicken your soup using 1/2 C butter and 1/2 C flour. Add flour to melted butter and whisk until smooth. Make soup as described above. Also adding 1/2 Tsp. garlic powder, 1/2 Tsp. Onion Powder, 1/2 Tsp. Black Pepper, and 1 chicken bouillon cube. Once broccoli is tender, add roux and stir until thickened. Enjoy!

FYI--I doubled this recipe and that is reflected in my photos below. I was able to take dinner to 2 different families and feed my own with this pot of soup! I would say doubling it feeds 12-14 adults (being conservative).
