You know that cookie that you just can’t forget about? This is one of those cookies. I don’t know what it is about a shortbread cookie, but I LOVE them! It must be all of the butter and sugar…that’s a great combo. Grandma Kathy’s Shortbread Cookies are simply the best!
1 C. butter, softened
1/2 C. powdered sugar
1/4 Tsp. salt
1/4 Tsp. baking powder
2 C. flour
Cut into wedges or squares. Serve warm or cold. Makes 24 cookies.
You can serve the cookies as is, sprinkle with powdered sugar, or lightly frost with a homemade buttercream. Our favorite buttercream can be found here.
