4th of July Fruit Pizza

Hello!! We are Cassie and Sadie from Clover Lane, and we live to eat, and love to craft! We are so excited to share one of our most favorite desserts (now that is saying something because we LOVE dessert) with you today. Fruit pizza is pretty much a summer staple over at our homes! Our favorite holiday to make it is the 4th of July. We think it is simply stunning.....and delicious!

​Before we share the recipe we use, we need to disclose something. We are absolutely homemade sugar cookie or die. Store bought cookie dough to us is sinful....HOWEVER.....store bought sugar cookie dough is acceptable for fruit pizza. This will be the one and only time we ever recommend that either can be used!
Fresh Fruit:
Strawberries
Blueberries
Raspberries

Cream Topping:
1 batch sugar cookie dough (recipe below or refrigerated cookie dough roll)
1 8 oz. brick of cream cheese
3/4 C. powdered sugar
1 small container of cool whip

​Cookie dough-
3 cups flour
1 1/4 cups sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
Cut in:
1 cup butter
mix in:
2 eggs
4 Tbsp. milk
1 tsp. vanilla

Instructions: With electric mixer or kitchenaid, mix dry ingredients. Cut in butter. Then mix in wet ingredients until incorporated. Don't over mix. Roll out cookie dough 1/4" thick and cut into desired shape. We typically do round, but these cute star cookie cutters looked perfect for the 4th of July! Place cut out cookie dough on a parchment paper lined or silicone lined cookie sheet. Cook cookie dough at 350 degrees for 8-10 minutes. We like a softer cookie so we shoot for 8. With an electric mixer incorporate cream cheese and powdered sugar together. Once there are no lumps, fold in cool whip. Frost cooled crust with cream cheese mixture and top with chopped fruit! Refrigerate and serve cold!

Roll out cookie dough. We like a thicker crust for sugar cookies so we typically roll our dough 1/4-1/2 in thick. Cut out dough into desired shape. Any shape works so have fun with it! Place on parchment paper lined or silicone lined cookie sheet and cook at 350 degrees for 8-10 minutes. We prefer a softer crust so we are cautious about overbaking.

While your cookies are baking, prepare the cream cheese topping. Put cream cheese and powdered sugar in the bowl of your electric mixer. Mix until well incorporated. Fold in cool whip topping

We chose red and blue fruit for our 4th of July fruit pizza. Wash fruit, slice large fruit into small pieces, and cut off greens if using fruit like strawberries. Once cookies have cooled completely, smooth cream cheese mixture onto the cookies and top with fruit. Keep in mind that it doesn't have to look perfect to be beautiful! Keep cool until it's time to serve!
