Cadbury Mini Egg Blondies

Delicious homemade blondies stuffed with Cadbury Mini Eggs.

  • 1 cup Salted butter Softened
  • 2 cups Brown sugar
  • 2 Eggs
  • 1 teaspoon Salt
  • 3/4 cup Oatmeal, pulverized in blender (measure 3/4 c. then pulverize)
  • 2 cups All purpose flour
  • 1 teaspoon Baking powder
  • 1 bag Milk chocolate Mini Eggs (about 1 1/2 cups)


  • Cream butter, brown sugar, and eggs.
  • Pulverize oats in a blender.
  • Stir all dry ingredients together and mix them into creamed butter, sugar, and eggs.
  • Fold in the Mini Eggs.
  • Spread batter into an ungreased baking pan. I used a 6x9 pan so the bars were thicker. You can use a 9x13, the bars will just be thinner.
  • Bake at 325 degrees for 25-40 minutes or until a toothpick is inserted in the center and comes out clean.
  • Blondies will be lightly browned on the edges when done.
  • Let the bars cool completely before slicing.
